This delicious sandwich is full of flavour, and makes a light and healthy lunch that won’t leave you feeling too full or bloated.  The chicken and avocado filling complements Burgen Soya & Linseed bread perfectly.

Spread two slices of Burgen Soya & Linseed bread very lightly with low fat mayonnaise
Layer with thin slices of roast chicken, avocado and rocket
Season with black pepper and serve immediately

This delicious and healthy sandwich provides many vitamins and nutrients especially beneficial to women's health.

Using a fork mix some fresh couscous with some roasted red pepper and some chopped tomato
Add pepper and some finely chopped fresh basil
Serve between two slices of Burgen Soya & Linseed bread
Handy Tip: Make enough couscous to be an accompaniment for your evening meal. Couscous is delicious with chicken and will stay fresh in the fridge in an air-tight container for a couple of days

As a change, how about the delicious zing of spiced chicken breasts, coated in crispy Burgen Soya & Linseed breadcrumbs.

Mix together 6 slices of Burgen Soya & Linseed made into breadcrumbs, 30ml (2 tablespoons) of fresh coriander (chopped), 1 clove of garlic (crushed), and 5ml (1 tsp) of chili powder
Dip 4 skinless chicken breasts first in beaten egg and then in the spicy crumb mix
Place the chicken breasts in a shallow oven-proof dish and brush lightly with oil
Bake in a moderate oven (350oF, 180oC, gas mark 5) for 40-45 minutes or until crispy
