Spread two slices of Burgen Soya & Linseed
bread very lightly with low fat mayonnaise
Layer with thin slices of roast chicken,
avocado and rocket

Using a fork mix some fresh couscous
with some roasted red pepper and some chopped
tomato
Add pepper and
some finely chopped fresh basil
Serve between two
slices of Burgen Soya & Linseed bread
Handy Tip: Make
enough couscous to be an accompaniment
for your evening meal. Couscous is
delicious with chicken and will stay
fresh in the fridge in an air-tight
container for a couple of days
As a change, how about the delicious
zing of spiced chicken breasts, coated
in crispy Burgen Soya & Linseed breadcrumbs.
Mix together 6 slices of Burgen Soya & Linseed
made into breadcrumbs, 30ml (2 tablespoons)
of fresh coriander (chopped), 1 clove
of garlic (crushed), and 5ml (1 tsp) of chili powder
Dip 4 skinless chicken breasts first
in beaten egg and then
in the spicy crumb mix
Place the chicken breasts in a shallow
oven-proof dish and brush lightly with oil
Bake in a moderate oven (350oF, 180oC,
gas mark 5) for 40-45 minutes or until crispy
